Holbaek Brewery is a microbrewery founded in 2005 by a group of local beer enthusiasts.
The original shareholders fought a brave battle but had to give up in 2010 and after a couple of ownership changes, the brewery have been owned since 2010 by the people behind the restaurant Brewhouse No5.
The brewery is located in the basement under the restaurant, first named Nygade No5, but over time changed it’s name to Bryghuset No5 – Institute for Beerology and hectolitterature.
Holbaek Brewery is probably one of the smallest microbreweries in Denmark and in the beginning, only beer sold in the restaurant and out of the house on draft was brewed.
The first brews was bottled shortly before Christmas in 2006 and today, a decade and change later, beers from Holbaek Brewery are sold primarily in the western and northwestern Zealand.
